You are responsible for process innovation within a brewery which produces a range of beers including lager and ale styles with hop pellets added during wort boiling. Currently a combined kettle and whirlpool is used for wort boiling and clarification. Management has asked you to consider whether it would be suitable to invest in additional wort clarification equipment. Initially they have asked you to put together a report comparing the positive and negatives of trub removal. This scientific report should be a maximum of 600 words and should include:
You are not asked to consider the range of wort clarification options or the suitability ofcombined kettle/whirlpools– instead, with use of suitable references, you should focus on the impact of trub and wort particles on the beer production process including physical, chemical and biological impacts.
References should be included according to Harvard style and each should have the DOI included if available. You can find out more about the referencing style here: Harvard. You should be critical in your approach to the use of sources. Better assignments will identify suitable peer reviewed articles with less reliance on websites, non-peer reviewed commentary, textbooks etc. Other sources of information may be used but possible issues with the data should be clarified in the report.
